These vegan bacon wrapped asparagus are so good, no one will ever believe they're vegan. This makes an excellent and impressive side dish for just about any meal.
Awhile back I discovered Hooray Foods vegan bacon while shopping at the grocery store. I typically shy away from faux meats but I was so intrigued. This bacon comes packaged just like real bacon. I flipped over the package to read the ingredients to find that the bacon was made using coconut, beets, and starch and must importantly it didn't contain any soy. Long story short, don't expect me to make bacon from rice paper or mushrooms anymore. Lol. You just ca't beat the authentic flavor and the incredible convenience of this bacon....
How to make vegan bacon wrapped asparagus
The first thing you will want to do is let the package of bacon sit out o the counter for about 10 minutes before using it. This will give the bacon time to soften and bacon pliable and prevent the slices of bacon from breaking while you handle them.
Next prepare your asparagus by trimming of about 1-1/2 inches of them bottoms to get rid of the woody ends. Then divide them into 5 equal size bunches.
Once the bacon is soft enough remove 5 slices and add them to a non stick sheet pan and place them in the oven on *300 for about 5 minutes. This will help them soften even more so you can wrapped them around your asparagus.
After removing the bacon from the over wait a few moments for them to cool down enough to handle. Then carefully wrap one slice of bacon around each bunch as snug as possible and place them seam side down onto the sheet pan.
Once they are all on the sheet pan drizzle them with extra virgin olive oil, salt, pepper and fresh garlic.
Place the sheet pan onto the middle oven rack and roast on *400 for about 20 minutes.
The bacon should be crispy and the asparagus should be tender.
