Roasted Tomato Bruschetta With Vegan Cream Cheese

Take your bruschetta toast to the next level by roasting cherry tomatoes with garlic and topping them fresh basil and pile them on top of crusty bread with vegan cream cheese.

I love tomato bruschetta and was so excited to take it up a notch with this recipe.
Ingredients
1 container of cherry tomatoes
3 cloves of fresh garlic minced
3 tbs of extra virgin olive oil
1 container of vegan cream cheese (I used the Trader Joe's vegan cream cheese and it was perfect)
Balsamic glaze ( also from Trader Joe's)
Fresh basil chopped
salt to taste
Good quality bread - I always get a fresh loaf from the bakery section at my local Whole Foods
Instructions
Preheat the oven to 375*
Add the tomatoes into an oven safe dish and add in the oil, garlic and a generous pinch of salt and mix together.
Add the dish to the oven and cook for about 20 minutes.
Now toast your bread. I like to drizzle mine with extra virgin olive oil or vegan butter and toast it in the oven on broil for a few minutes.
Once the bread is toasted spread a generous amount of vegan cream cheese on top.
Now you can pile on the tomatoes and add some fresh basil and a drizzle of balsamic glaze.
