Ultimate Veggie Fried Rice


I love making fried rice. It's one of those dishes that you can pretty much add any vegetable to and it still comes out great. At the end off every wee I always have tons of random leftover vegetables. I almost always have a pathetic little sliver of red pepper rolling in the bottom on my veggie drawer along with scallions, cilantro and onions. So I gathered them up with the rest of my leftover vegetable scraps and chopped them up too make this super delicious fried rice recipe.


My Tips For Making Fried Rice


1. Use cold leftover rice - Fried rice is always better when you use cold left over rice. It helps prevent the dish from becoming mushy. If you don't have any leftover rice you can make some and rinse it under cold water and strain it before using it in this recipe.


2. Turn up the heat - Making fried rice is super quick and easy. You want the veggies to be cooked but still maintain their texture so make sure your pan is on medium high heat..


3. Use what you got - You can use just about any vegetable you have in your fridge. This is the perfect time to get rid of all those veggie scraps! Got carrots? Throw them in! Got Celery? throw it in! Green beans, kale, broccoli, spinach, basil? Throw it in the pan


Ingredients

  • 4 cups of cooked rice

  • 3 scallions

  • 1/2 cup of chopped red pepper

  • 1/2 cup of yellow pepper chopped

  • 1 handful of thinly sliced cabbage (any cabbage will do but I used red cabbage)

  • 3 garlic cloves minced

  • 1 tsp of fresh ginger grated or minced

  • 1/4 cup of fresh cilantro chopped

  • 1 handful of chopped Chinese broccoli or any leafy green veggies you have on hand.

  • 3 tbs of oil for cooking I used avocado oil

  • 1/2 tsp of toasted sesame seed oil

  • 1 tbs of soy sauce

  • Salt and pepper to taste

Instructions


  1. Place a large skillet over medium high heat and add the oil and veggies. Cook while stirring for about 4 minutes.

  2. Next add in the ginger and garlic and stir.

  3. Now add in rice and soy sauce and sesame oil and stir while cooking for about 4 minutes or until everything is well combined.

  4. Stir in the fresh cilantro

  5. Add salt and pepper to taste!
