Super Smokey & Buttery Brussels

I love cooking Brussel sprouts and I am always looking for new ways to cook them. I love making them with lots of butter and chipotle seasoning because it gives them such a slow, soulful flavor.



  • 1-1/2 pounds of fresh Brussel Sprouts trimmed and quartered

  • 2 thyme leaf sprigs

  • 1 leek diced small

  • 2 tbs of vegan butter

  • 2-3 tbs of extra virgin oil

  • 1/2 tsp of chipotle chili powder

  • 1/2 cup of vegetable broth or water

  • salt to taste


  1. Place a large skillet over medium heat and add in the oil and vegan butter.

  2. Once the oil and butter are hot add in the chopped leeks and Brussel sprouts.

  3. Cook while stirring occasionally for 7-10 minutes.

  4. Carefully pour in the vegetable broth and chipotle seasonings and cover with a lid.

  5. Raise the heat to medium high cook for an additional 5-6 minutes making sure to stir occasionally.

  6. Remove the lid and add salt to taste.
