Herb Roasted Delicata Squash


Of all of the squash varieties out there Delicata squash is one of my favorites. It taste less sweet that a butternut squash and it has a very potato like texture that I absolutely love. In fact, you can use it instead of potatoes in so many different recipes. For this recipe I just wanted something quick, simple, easy and full of flavor and that is exactly what I got.

Cook Time 25 minutes

Serves 2 People


Ingredients


1 Delicata squash cut in half with the seed removed

1 tsp of fresh sage chopped

1 tsp of fresh rosemary chopped

2-3 tbs of extra virgin olive oil

salt to sate


Preparation:

  1. Preheat the oven to 375*

  2. Drizzle the olive oil on to the open side of each squash half

  3. Sprinkle of the fresh herbs and a dash of salt

  4. Place the squash cut side down onto a sheet pan or baking dish.

  5. Cook for about 20 minutes or until the squash is nice and tender

  6. That's it!
