Black Bean Avocado Quesadillas

Everyone that knows me personally knows that I love just about anything in a flour tortilla, especially quesadillas. Growing up I was accustomed to the typical quesadillas but now that I eat a plant based diet I love experimenting with different combinations. I'm constantly trying to come up with different things to use when I make them....and that's how these black bean avocado quesadillas were born.

Cook time 15 minutes

Makes 4 quesadillas


Ingredients:


  • 4 large ripe avocados

  • 1/3 cup of diced red onion

  • 2 vine ripe tomato diced

  • 2 cups of spinach

  • 1 cup of cooked black beans (or 1/2 a can of black beans rinsed and drianed

  • 1/4 cup of fresh cilantro chopped

  • 1 tbs o extra virgin olive oil

  • salt and pepper to taste

  • 2 tbs of fresh lime juice

  • medium flour tortillas

  • extra virgin olive oil for cooking


Preparation:


  1. First remove the avocados from the skin and add into a bowl. Now add in the lime juice and gently mash them making sure to leave several large chunks. Then stir in the tomatoes, onions, black beans, extra virgin olive oil, cilantro and spinach. Add salt and pepper to taste.

  2. Now add the mixture on to one side of a flour tortilla and fold over the other side. Do this for all.of the flour tortillas and set aside. Next place a medium size skillet over medium heat and add in 1 tbs of extra virgin olive oil. Carefully cook each quesadilla for about 1-2 minutes on each side or until golden brown.....
