It's super simple and easy. The bottom layer is just pineapple and coconut water and the top is just a quick pineapple coconut ice cream. Making coconut cream is super simple. You can use fresh or canned coconut milk. All you need to do is put your canned or fresh coconut milk in the refrigerator overnight. The next day you will wake up to the most creamy and lush coconut cream. If you do use canned coconut milk I would highly suggest getting an organic brand that only contains coconut and water on the ingredients label.
All you need is
The Bottom Layer
3 Cups of Frozen Pineapple
2-1/2 Cups of Coconut Water
The Top Layer
1 Cup of Frozen Pineple
1 Cup of Coconut Cream
Combine Frozen Pineapple and Coconut Water into a blender and blend the bottom layer together.
Next combine Coconut Cream and Pineapple into a food processor and blend until thick and creamy. (I decided to use my food processor because I wanted an ice cream like consistency but you can always use your blender for both layers.)
Pour both mixtures into a tall glass and enjoy.
