Caprese salad is a classic Italian salad made by alternating layers of fresh tomatoes, mozzarella and fresh basil drizzled with extra virgin olive oil and balsamic vinegar. It's incredibly light and full of fresh flavor. Lucky for the vegan community the Miyokos Creamery and their amazing vegan cultured mozzarella making a vegan version is easier than ever.

3-4 vine ripe tomatoes
Miyokos Vegan Mozzarella
Sea Salt & Pepper
This salad was super simple to make all you need to do is slice the tomatoes and mozzarella and layer them onto a plate or platter. Then drizzle with a touch of extra virgin olive oil and balsamic vinegar. Add sea salt and pepper to taste and fresh basil.
This is the vegan mozzarella that I used and it is so DAMN GOOD!!
Just assemble the salad by layering the tomatoes and cheese together. Then just drizzle with the extra virgin olive oil, balsamic vinegar, basil, salt and pepper. I used Maldon Smoked Sea Salt and it was perfect!
