Chopped cucumber and tomatoes with olives, red onions, capers, herbs and vegan feta!
Recently I've been super focused on eating tons of raw vegan meals. Especially since I just released my latest ebook Easy Raw Vegan 7-Day Challenge. I've been very adamant about eating clean and staying focused on fresh healthy meals. Plus I've been trying my best to drop some of my pandemic pounds. I'm trying my best to eat at least one salad everyday and today was Greek salad day. Greek salad is one the most flavorful salads you can make. It's full of fresh ripe tomatoes, fresh crisp cucumbers, red onions, tons of herbs and feta cheese tossed in a tangy lemon red wine vinaigrette. It makes a perfect side item to just about any meal or even the main dish if you're anything like me. I love the fact that there are now so many amazing vegan cheese options out there. For this recipe I used the Violife brand of vegan feta and I absolutely loved how tangy and creamy it was.
Key Greek Salad Ingredients
Cucumbers - I like using English cucumbers because the skin and seeds are super soft unlike traditional cucumbers. Plus they're much larger in size.
Ripe Tomatoes for this recipe I opted for to use Campari tomatoes - Campari is a type of tomato, noted for its juiciness, high sugar level, low acidity, and lack of mealiness. Camparis are deep red and larger than a cherry tomato, but smaller and rounder than a plum tomato.

Feta Cheese - I used the Violife Vegan Feta Cheese

My Spin On A Classic
I added a few ingredients to mine to bump up the flavor. I added capers and green olives marinated with garlic and lemon from Whole Foods Market. They are my current olive faves. You can find them in the antipasti section of Whole Foods or just use whatever olives you like. I also added tons of fresh mint. I made a fresh lemony red wine vinaigrette and it was amazing. Just toss everything together and serve!
I really enjoyed using the Violife feta. I made the salad for my mother who is in town to visit from Paris and one of my best girlfriends Heidi. Neither of them are vegan and they loved the vegan feta!
Just make the vinaigrette and toss it with the rest of the ingredients. Then just dash it with salt and lots of pepper to taste.
