Savory Skillet Rice

If you're looking for a quick comforting meal then this is the recipe for you. Let's face it, we all have days when we just don't feel like going all out for dinner. Thats why I love things that make cooking dinner easier like the using the frozen precooked Jasmine rice and Mushroom Medley from Trader Joe's. I was shocked when I tried the mushrooms because I thought there was no way I would like frozen precooked mushrooms but Trader Joe's has a magic touch because they were delicious.They're well seasoned with salt, garlic and extra virgin olive oil. Best of all they were just a few dollars.

 

Cook Time: 25 Minutes

Serves 2-3 people


Ingredients

  • 1 red bell pepper chopped

  • 1 green bell pepper chopped

  • 1/2 red onion diced

  • 2 garlic cloves

  • 1 8oz package of mushrooms chopped

  • 1 package of fresh spinach

  • 4 cups of cooked rice (leftover rice is great too)

  • 2 thyme sprigs with the leaves removed

  • 1/2 tsp of fresh chopped sage

  • 3-4 tbs of extra virgin olive oil

  • Salt and pepper to taste

Preparation

  1. Place a large skillet over medium heat and carefully add in the extra virgin olive oil.

  2. Add in the onions, diced peppers, garlic, thyme sprigs, sage and mushrooms.

  3. Cook for 7-8 minutes.

  4. Next add in the 4 cups of cooked rice and spinach.

  5. Add salt and pepper to taste.

  6. Enjoy
