Mixed Berry Crisp

Looking for a way to use up your frozen fruit in your freezer? Try making this super easy berry crisp. It's super easy and delicious. You can use just about whatever frozen fruit you have on hand.

Cook Time: 40 Minutes


Ingredients

  • 6 cups of frozen mixed berries thawed

  • 1/2 cup of sugar use 3/4 a cup if you like things sweeter

  • 1 tbs of cornstarch

The Crisp Topping

  • 1/4 cup of cold vegan butter

  • 1/4 cup of sugar

  • 1/2 cup of quick oats

  • 1 tsp of vanilla extract

  • 1 cup of all purpose flour (You can use oat flour, rice flour or spelt flour)

  • pinch of sea salt

  • 1 tsp of maple syrup (optional)

Preparation

  1. Preheat oven to 350*

  2. Add the frozen fruit including the juice, sugar, and cornstarch to a large bowl and mix well.

  3. Pour the fruit into a baking dish.

  4. Using the same bowl, combine the ingredients for the crisp topping and use your hands to crumble all of the ingredients together until it resembles large crumbs.

  5. Add the crumb topping on top of the fruit

  6. Place into the middle oven rack and bake for 45 minutes or until the topping becomes golden and crispy.

  7. Remove from the oven and top with your favorite vegan ice cream before serving, I use the Oatly brand.
