Easy Roasted Green Beans & Potatoes

Tender green beans with shallots, garlic and hearty potatoes sounds like a winning combination to me. I love super easy and delicious recipes like this one. You literally just throw all the ingredients onto a sheet pan and let the oven do all the work.

Cook Time 30 Minutes

Makes 4-6 servings


  • 2 pounds of fresh green beans with the stems removed

  • 5 shallots quarter sliced

  • about 2 cups of sliced baby potatoes

  • 4 garlic cloves minced

  • 4 tbs of extra virgin olive oil

  • 1/2 tsp of salt plus more to taste


  1. Preheat the oven to 350*

  2. Place all the ingredients into a large bowl and toss to combine.

  3. Now add all the ingredients onto a large non stick sheet pan in an even layer. Use two pans if needed and cover with foil.

  4. Cook on the middle oven rack for about 15 minutes. Then remove the foil , toss the ingredients and raise the temperature to 400* and cook for an additional 10 minutes. Remove from the oven and add additional salt and pepper to taste.

I always use the commercial size sheet pans. Look at how much food you can prepare at once.
