Simple Kale & Sweet Potato


I don't know about you but I'm kinda over super heavy holiday food. I was begining to crave something filling but healthy and this combo did the trick!

Ingredients:

1 baked sweet potato cut in half

1/2 a bunch of kale cleaned and chopped

1/4 cup of red onion chopped

2 garlic cloves minced

2 tbs of extra virgin olive oil

1/4 cup of water or veggie broth

pinch of chili powder

pinch of cayenne pepper

sea salt and pepper to taste

1/2 an avocado

Place a large skillet over medium heat and add in the oil, onions and garlic. Cook for about 1 minute then add in the kale and carefully pour in the veggie broth and cover with a lid for 2-3 minutes. Remove the lid and stir. Add in sea salt and pepper to taste. Next sprinkle a little chili powder and cayenne pepper to your sweet potato. Finally, add the fresh avocado to your plate and ENJOY!
