Sriracha Oyster Mushroom Sandwich

 

 

Every now and then I throw all my “healthy eating” out of the door and give into the temptation for food that is ridiculously scrumptious and kinda bad…. I’ve never been a buffalo sauce person but I worship sriracha sauce so I thought.  “Why not coat fried oyster mushrooms in sriracha sauce and make a sandwich. Oh, and make a ranch mayo to go with it.”  And that is exactly what I did. 

 

 

Cook Time: 45 minutes 

Makes: 4 Sandwiches

 

Ingredients:

 

4 vegan buns (You can always find vegan bread options in the bakery section of the grocery store or in your local bakery. I was lucky enough to find vegan pretzel rolls at my local bakery…SCORE!) 

1 large bunch of oyster mushrooms pulled apart

oil for cooking

 

The sriracha dipping sauce

½ cup of sriracha

juice of 1 lemon

 

Dry Batter

1 cup of flour (you can also use rice flour or chickpea flour)

½ cup of cornmeal

1 tbs of onion

½ tbs of garlic (optional)

½ tsp of paprika

½ tsp of sea salt

pinch of fresh black pepper

 

Wet Batter

½ cup of flour

1 cup of water

1 tbs of sriracha

1 tsp of onion powder

 

Ranch Mayo

½ cup of vegan mayo (I used Just Mayo. You can find it at most grocery stores, Target and even Whole Foods)

1 tbs of chives

1 tsp of parsley

1-1/2 tsp of lemon juice

1 tbs of nutritional yeast

pinch of black pepper

 

Instructions:

 

First make the ranch mayo by combining all the ingredients into a small bowl and whisk until combined.  Cover the bowl and place it in the refrigerator until ready to use. 

 

Next prepare the wet batter by combining all the ingredients into a medium size bowl and mix well.

 

Now make the dry batter by combining all the ingredients into bowl and mixing well.

 

Place a large skillet on the stovetop and add in oil about ½ an inch deep. Raise the heat to medium to medium high heat.

 

Begin preparing the mushrooms first dipping them into the wet batter and then coat them with the dry batter. Shake of any excess flour and carefully place into the hot oil.

 

Cook the mushrooms for about 2 minutes on each side or until each side or until crispy and golden brown.

Remove the mushrooms and drain onto a paper towel.  

 

Then coat the mushrooms with the sriracha sauce and assemble the sandwiches.

Oyster mushrooms make a great substitute for chicken.......Just look how the resemble pulled chicken.
