Cannellini Beans with Spinach and Carrots

I absolutely love the idea of quick one pan meals. This one is super easy and quick and so full of fresh flavors. The beans are nice and filling, the spinach and carrots add great texture and the fresh basil, garlic and lemon juice sets it off.


Cook Time: 20 Minutes

Makes 2 Servings

Ingredients:

  • 1 can of Cannellini beans drained and rinsed

  • 16 oz. of fresh spinach

  • 2 carrots peeled and sliced thin

  • 2 cloves of garlic finely chopped

  • 4 tbs of extra virgin olive oil

  • 1 small handful of fresh basil chopped

  • 3-4 tbs of fresh lemon juice

  • Sea salt to taste

Preparation:

Place a large sauce pan over low heat. Add olive oil and garlic and let sit for 3-4 minutes (this will allow the garlic to infuse the oil).

Next add in carrots and spinach. Allow spinach to wilt and add in the remaining ingredients. Add salt to taste and ENJOY ;-)
