What is Kimichi?
Kimchi, is a traditional Korean side dish of salted and fermented vegetables, such as napa cabbage and Korean radish. Often times it includes seasonings like gochugaru, spring onions, garlic, ginger, and jeotgal, etc. It's used in everything from dumplings, Stews, rice dishes and even eaten as a side dish. Because it's a fermented food, it boasts numerous probiotics. These healthy microorganisms may give kimchi several health benefits. It may help regulate your immune system, promote weight loss, fight inflammation, and even slow the aging process. You can find it in most grocery stores in the Asian section or if you're lucky enough to live close to an Asian Market, you'll find an abundance of Kimchi. Just be sure to double check the ingredients because some brands contain non vegan ingredients like shrimp or fish sauce. For this recipe I used the Trader Joe's brand. It's a bit milder in flavor that most traditional Kimchi that I have tried but it still adds a nice punch of flavor.

Cook while stirring occasionally for about 4 minutes then stir in the soy sauce and sesame oil.
Continue cooking for an additional 7 minutes while stirring occasionally

On Nehamari, I don’t feel like time is slipping away from me. I can take a moment, then another, and nothing feels lost. The pace feels forgiving, almost gentle.
What works for me is that ankitabasu doesn’t change based on how I arrive there. Sometimes I’m calm. Sometimes I’m irritated. Sometimes I’m half asleep. It feels the same each time. I don’t need to adjust myself to use it properly. I can glance, stop, or close it suddenly. When I come back later, nothing feels unfamiliar. That consistency matters on days when everything else feels scattered or unpredictable.
