Vegan Kimchi Fried Cauliflower Rice

Looking for a tasty low carb dish? Try this tasty low carb kimchi fried cauliflower rice.

What is Kimichi?


Kimchi, is a traditional Korean side dish of salted and fermented vegetables, such as napa cabbage and Korean radish. Often times it includes seasonings like gochugaru, spring onions, garlic, ginger, and jeotgal, etc. It's used in everything from dumplings, Stews, rice dishes and even eaten as a side dish. Because it's a fermented food, it boasts numerous probiotics. These healthy microorganisms may give kimchi several health benefits. It may help regulate your immune system, promote weight loss, fight inflammation, and even slow the aging process. You can find it in most grocery stores in the Asian section or if you're lucky enough to live close to an Asian Market, you'll find an abundance of Kimchi. Just be sure to double check the ingredients because some brands contain non vegan ingredients like shrimp or fish sauce. For this recipe I used the Trader Joe's brand. It's a bit milder in flavor that most traditional Kimchi that I have tried but it still adds a nice punch of flavor.

Trader Joe’s KIMCHI (Spicy Fermented Napa Cabbage)Ingredients: Napa Cabbage, Radish, Onion, Red Pepper Powder, Salt, Garlic, Vinegar, Lactic Acid (“Made in Korea”)


How to make vegan Kimchi fried cauliflower rice!


Making this recipe is super simple. All you need is your choice of veggies, kimchi, uncooked riced cauliflower (I love the Trader Joe's brand), oil for cooking, soy sauce, sesame oil, garlic and salt.


Ingredients used

  • 1 bag of riced cauliflower rice

  • 1 bell pepper I used 1/2 of an orange and yellow pepper

  • 3 large garlic cloves minced

  • 1/2 cup of onion chopped

  • 4 scallions chopped

  • 1 handful of mushrooms sliced

  • 2 handfuls of leafy green veggies shopped (I used Chinese broccoli)

  • 1/2 cup of kimichi

  • 2 tbs of soy sauce

  • 1 tsp of toasted sesame seed oil

  • 3 tbs oil for cooking

  • salt and pepper

Preparation:

  1. First you'll need to sauté the veggies and kimichi in a large skillet over medium high heat for about 6 minutes, Then add in the garlic and cauliflower rice and stir well

  2. Cook while stirring occasionally for about 4 minutes then stir in the soy sauce and sesame oil.

  3. Continue cooking for an additional 7 minutes while stirring occasionally

  4. Add salt to taste before serving.
