I've been using King Oyster Mushrooms to make vegan scallops for years and I am so happy to finally share a super easy and delicious recipe for them here on my blog. This recipe is ridiculously easy and has some seriously sophisticated favors. I used lots of capers, dill, garlic and a little hot pepper sauce for an extra little kick. The result was crazy good. The great thing is that these King Oyster Mushroom Scallops can be paired with so many different things to complete a meal. I had some leftover white truffle grits and spinach and the combo was DEVINE!!!
For the Truffle Grits I just made grits using the package instructions then stirred in about 2-3 tbs of vegan butter, then stirred in a drizzle of truffle oil and added salt and pepper to taste.
