King Oyster Mushrooms are an unbelievable dupe for sea scallops. The texture and flavor is uncanny. If you are on a quest to eat more plants but don't want to miss out on scallops, this recipe is for YOU!

King Oyster Mushroom Scallops

I've been using King Oyster Mushrooms to make vegan scallops for years and I am so happy to finally share a super easy and delicious recipe for them here on my blog. This recipe is ridiculously easy and has some seriously sophisticated favors. I used lots of capers, dill, garlic and a little hot pepper sauce for an extra little kick. The result was crazy good. The great thing is that these King Oyster Mushroom Scallops can be paired with so many different things to complete a meal. I had some leftover white truffle grits and spinach and the combo was DEVINE!!!

For the Truffle Grits I just made grits using the package instructions then stirred in about 2-3 tbs of vegan butter, then stirred in a drizzle of truffle oil and added salt and pepper to taste.

Here are some other ideas you can serve them with:

  • Rice or Risotto

  • Pasta

  • Sauteèd spinach

  • Salad

  • Couscous


King Oyster Mushrooms have are great because they have a very mild flavor and a great fatty texture. I have found that the best place to purchase them is a Asian markets like H-Mart.

How to cook ing oyster mushrooms

Just cut off the tops then just slice them into half inch pieces and use your knife to make a few shallow cuts on the top.

How to make king oyster mushroom scallops

Place a skillet over medium high heat and carefully add in the oil. Cook the mushrooms for about 2 minutes on each side. It's also important to resist the urge to flip them too quickly. Once they're done remove them from the pan and sprinkle with a pinch of sea salt.

Now begin making the sauce but first you must LET THE PAN COOL down to medium low heat before adding in the oil and garlic. Cook for about 1 minute while stirring. Then add the vegan butter, capers and hot pepper sauce and stir.

Now you can add the mushrooms back into the sauce and stir until coated. Finish by adding in the fresh dill, lemon juice and sea salt and pepper to taste.

Now you can serve them with whatever you like.
