Buffalo Artichoke Salad


A few years ago I discovered Monterey Farms Artichokes while shopping for produce at Whole Foods Market. They come vacuum packed in four different flavors "Grilled, Herbal, Buffalo and Plain" I buy them all the time and I always have at least 2-3 packs in my fridge. Unlike the marinated artichokes you find in jars, these babies have a firm unbelievably chicken like texture that seems to be exclusive to this brand. They come in several flavors and all of them are delicious. I used the Buffalo flavor for this recipe. You can find the Monterey Farms Artichokes here or at your local Whole Foods Market. I think I'm going to start buying them by the case directly from the company because thats just how much I love them.


Ingredients

  • 1 package of Monterey Farms Buffalo Artichokes cut into pieces

  • 1 tbs of sriracha sauce

  • 1 english cucumber sliced

  • 1 carton of lettuce washed and cleaned

  • 1/2 a red onion thinly sliced

  • 2 cups of sliced tomatoes of your choice

  • 1 cup of sliced sweet peppers

  • 3 tbs of extra virgin olive oil

  • 1/2 tsp of onion powder

  • 1/2 tsp of garlic powder

  • salt to taste

The Cashew Ranch Dressing

  • 1 cup of raw cashews

  • 2 tbs of nutritional yeast

  • 1 tbs of onion powder

  • 2 tsp of garlic powder

  • 1/2 tsp of salt

  • the juice of 1 lemon

  • 1 tbs of fresh chives

  • 1 tbs of fresh parsley

  • 3/4 cup of water

Preparation:

  1. First make the raw cashews dressing by combining all the ingredients to a blender except the fresh herbs and blend until smooth.

  2. Once the dressing is smooth fold in the fresh herbs and additional salt to taste and set aside.

  3. Now place a skillet over medium heat and add in the oil and artichokes.

  4. They are already cooked so you just want to warm them up and get a little crispy for a few minutes.

  5. Add in the garlic and onion powder and sriracha sauce and stir while cooking for an additional 4-5 minutes.

  6. Now you can assemble your salad.

  7. Store any remaining salad dressing in a mason jar in the fridge for up to 1 week.

 

See how good this looks. It literally looks like chicken!!
