If you've been on social media over the last few weeks I'm sure you've noticed the Viral Baked Feta & Tomato Pasta videos circulating. After watching them, I knew I had to make a vegan version.
This dish was incredibly easy, delicious and fun to make. I found all of the things that I needed at my local Whole Foods. I used the Violife Foods Vegan Feta and I opted to add in some Kite Hill Vegan Cream Cheese for extra creaminess and tanginess and it was perfect.
Cooking Tips:
Most blocks of vegan cheese will definitely release a lot of water when you bake them with the tomatoes. This is why I added in the cream cheese at the end and it saved the day.
