If you've been on social media over the last few weeks I'm sure you've noticed the Viral Baked Feta & Tomato Pasta videos circulating. After watching them, I knew I had to make a vegan version.
This dish was incredibly easy, delicious and fun to make. I found all of the things that I needed at my local Whole Foods. I used the Violife Foods Vegan Feta and I opted to add in some Kite Hill Vegan Cream Cheese for extra creaminess and tanginess and it was perfect.
Most blocks of vegan cheese will definitely release a lot of water when you bake them with the tomatoes. This is why I added in the cream cheese at the end and it saved the day.
Cooking Time: 40 Minutes
Makes About 4 Servings
2 pints of cherry tomatoes
4 garlic cloves
1 tsp of seasoning of your choice (Italian seasoning, Herbs de Provence or oregano are great choices)
2 tbs of extra virgin olive oil
1 box of pasta cooked
1 container of cream cheese
2 tbs of fresh chives chopped
1 small handful of fresh basil chopped
salt and pepper to taste
Preheat oven to 400*
Add the tomatoes to a large baking dish and add the block of feta cheese in the middle and add in the garlic cloves. Drizzle with extra virgin olive oil and seasonings. Place the dish onto the middle oven rack for about 30-40 minutes.
While the tomatoes and feta are cooking add the cream cheese and chives into a bowl and mix well.
After 30-40 minutes remove the dish from the oven and stir in the cooked pasta, fresh basil and cream cheese.
Add salt and pepper to taste.
