Cook Time: 20 Minutes
Makes 2-3 Servings
1 bunch of asparagus with the woody ends removed
1/2 a small red onion thinly sliced
1 can of chickpeas with drained and rinsed
3 tbs of extra virgin olive oil
sea salt to taste
Preheat the oven to 400*
Place the asparagus, chickpeas, and red onion onto a large sheet pan and coat with the extra virgin olive oil and a pinch of sea salt.
Place the sheet pan on the middle oven rack and cook for about 15 minutes. Finally, remove from the oven ad add additional sea salt to taste and squeeze on a little fresh lemon juice.
You can enjoy this dish as is or even on top of a salad like the picture below.
