Quick & Easy Kale with Avocado

I love kale......I mean I really, really love it. I swear I probably eat it at least once a day and I've seriously come to believe that I have mastered all preparations of it. And this recipe here is one of my favorite ways to prepare it. It's super easy and done in about 10 minutes.....Not bad huh?

Cook Time: 15 Minutes

Makes About 2 Servings

The Ingredients

  • 1 bunch of kale (cleaned and chopped)

  • 1/2 a medium sized red onion sliced

  • 1 garlic clove minced

  • 1 avocado sliced

  • 1 lemon

  • 3 tbs of extra virgin olive oil

  • 1/4 cup of your favorite veggie stock

  • sea salt & black pepper to taste

  • pinch of cayenne pepper


Place a large skillet over medium heat and add in the extra virgin olive oil, onions and garlic. Now add in the chopped kale and stir. Carefully pour in the veggie stock and cover with a lid. Let the kale steam for 5-6 minutes. Remove from the heat and add in salt to taste. Serve with the sliced avocado. I like to drizzle my avocado with lemon juice, salt, extra virgin olive oil and cayenne pepper to taste.
