Vegan Cheesy Sheet Pan Baked Potatoes!

Buttery, garlicky and perfectly cheesy potatoes are perfect all year round. These potatoes are sure to become your new favorite side dish.

My son is obsessed with all things potato and I'm always looking for new ways to make them for him. I also always steam potatoes and keep them on hand throughout the week. Lately I've been making this recipe at least 2 times per week. You can make this dish with any potato but I love making them with baby yellow potatoes

How to make Vegan Cheesy Sheet Pan Baked Potatoes


  • 2 lbs of of cooked baby potatoes. (I like to steam mine whole. You can also boil them)

  • 3 tbs of extra virgin olive oil

  • 1/4 cup of vegan butter

  • 4 garlic cloves minced

  • 1/4 cup of chives chopped or scallions

  • 2 cups of vegan mozzarella cheese (I love the Whole Foods Plant Based Cheese Alternative)

  • salt and pepper to taste


  1. Preheat your oven to *350

  2. First you will need to cook your potatoes. I love steamed potatoes. I find that they retain more flavor and nutrients. To steam them, simply add them to a pot with a steam rack and a little water and steam them for about 20 minutes.

  3. Once the potatoes are done cooking let them cool down a little so that they are easy to handle.

  4. Then add them to a sheet pan and slice them in half and slightly mash them with the back of a spoon or fork.

  5. Next, add the oil, vegan butter, garlic, chives and a pinch of salt to a small pot over medium low heat and let it melt together for about 3-4 minutes.

  6. Once the butter and oil mixture has melted slowly pour over the potatoes.

  7. Then add the cheese on top and put the sheet pan into the oven and cook for about 15 minutes or until the cheese has melted. That's it.
