Vegan Lentil Sliders

 

I've been using lentils and rice to make burgers, sliders and even breakfast sausages for years. The combination creates a wonderful meat like texture and flavor that is a great alternative for store bought processed burgers. You can use the recipe below as a base for so many different recipes by changing the seasonings. The only requirement is a food processor the holds at least 7 cups.

 

Ingredients

 

2 cups of cooked green lentils

2 cups of cooked wild rice (any rice will do)

1/2 cup of quick oats

1/2 cup of flour

1/2 an onion chopped

1 tsp of mustard powder

the sprigs of 2 thyme leaves

1 tsp of poultry seasoning

dash of liquid smoke

1 tsp of salt 

pepper to taste

6-8 slider buns _ I use pretzilla vegan pretzel rolls

 

Optional toppings

Caramelized onions

Arugula

Dijon mustard

vegan mayo

Whole Foods brand smoked gouda cheese alternative

 

To make the patties add the onion into a food processor (I use a 7 cup food processor) and pulse until broken down. Next add in the remaining ingredients and pulse until it resembles ground meat. Next remove the mixture from the food processor and form your desired size patties and set aside. Next place a large skillet over medium heat and add in 1 tsp of oil. Once the pan is hot add in the patties (You may need to do it in batches so that you don't overcrowd the pan. Let the burgers cook for about 4-5 minutes one each side. Remove from the heat and let cool for 5-7 minutes before making your sliders.
