I literally just devoured these tacos. They were super yummy and very easy to make. I actually topped them with fresh avocado and lime just before eating and I would highly suggest you doing the same.
Cook Time: 25 Minutes
Makes about 6 tacos
All you need is:
2 portabella mushrooms diced
1/4 cup of red onion diced
1/2 can of black beans drained and rinsed
1/4 of a red pepper diced
1/4 of a yellow pepper diced
1 large handful of kale diced
1 tsp of dry ground chipotle pepper
1/2 tsp of cumin
sea salt and pepper to taste
3 tbs of extra virgin olive oil
6 corn tortillas
Place a large skillet over medium heat and add in the oil, mushrooms and onion. Cook for about 5 minutes, then add in the black beans, chipotle seasoning and cumin. Cook for an additional 4-5 minutes. Squeeze your desired amount of fresh lime juice on and add salt and pepper to taste and place into a the tacos.
Now add a little more extra virgin olive oil to the pan and add int the kale. Cook for about 3-4 minutes or until wilted. Squeeze on a little lime juice and place into the tacos.
Finally top with the fresh chopped pepper. That's it!
I actually added fresh avocado to mine and it was amazing. You can do some many things with this recipe. Fresh pico de gallo would have been awesome. I just used what I had left over in my fridge.
