Vegan Balsamic Mushroom Fajitas with Kale

Whenever I make fajitas I use portabella mushrooms and adding balsamic vinegar produces this super rich and robust flavor that is absolutely amazing. I am a big time kale lover so I always add it to just about everything and these fajitas were no exception. The great thing about this dish is that the ingredients and preparation are super quick and simple.

 Cook Time: 20 Minutes

Makes: 2-3 Servings

 

 

All you need is:

 

1/2 an onion sliced

 

1 green bell pepper sliced

 

1 red bell pepper sliced

 

2 garlic cloves minced

 

4 portabella mushrooms sliced about 1/2 an inch thick

 

1 handful of fresh kale finely chopped

 

1/4 cup of balsamic vinegar

 

3-4 tbs of extra virgin olive oil (use more if needed)

 

sea salt and pepper to taste

 

flour tortillas (I use mission brand)

 

 

Preparation:

 

  • Place a large skillet (preferably cast iron but any pan will do) over medium heat and add in oil

 

  • Next add in the mushrooms, onions, peppers, garlic and kale and cook for about 6-7 minutes.

 

  • Next carefully and slowly pour in the balsamic vinegar and raise the heat to medium high and cook for an additional 4-5 minutes.

 

  • Add in salt and pepper to taste

 

  • Remove from heat and serve inside of your flour tortillas

 

 I never get tired of eating food like this.
