Garlic Lemon Chickpeas & Kale

I love it when I come up with a meal that is super quick and easy to make with minimal ingredients. This recipe is so fresh and delicious and you probably already have all of the ingredients in your kitchen.

 

Cook Time: 25 Minutes

Serves: 2

 

All you need is:

 

1 can of chickpeas rinsed and drained

 

2 carrots peeled and sliced

 

3 cloves of garlic minced

 

1 bunch of kale chopped

 

1/4 cup of fresh parsley

 

1/2 a lemon

 

3-4 tbs of extra virgin olive oil

 

salt to taste

 

Preparation:

 

Place a large skillet over low heat and add in garlic and carrots. Let garlic warm with the oil for about 3-4 minutes. Next add in the Chickpeas and kale and raise the heat to medium. Cook for about 4-5 minutes then add in lemon juice and salt to taste. That’s it!!
