Pasta with Spinach & Roasted Tomatoes

Here is another super quick and easy pasta dish. I love this recipe because it is super versatile. You can always swap out the veggies for whatever you prefer.

 

 

Cook Time: 30 Minutes

Serves: 2-4

 

All you need is:

 

1/2 a 16oz. box of penne pasta cooked and drained

 

3-4 handfuls of fresh spinach

 

1 cup of diced roasted tomatoes

 

1/2 a 12oz. container of artichoke hearts (you can use marinated if you like)

 

1 handful of baby portabella mushrooms sliced

 

5-6 Tbs of extra virgin olive oil

 

1 Tsp of garlic powder

 

1/2 Tsp of herbs de provence or Italian seasoning

 

1 Tsp of basil powder (use more or less depending on your prefernce)

 

salt and pepper to taste

 

4-5 Tbs of Vegan Parmesan Cheese (Check previous post for recipe, it’s super easy)

 

Pinch of Red Pepper Flakes

 

 

 

 

Preparation:

 

Bring a large skillet or pot over medium heat and add in extra virgin olive oil, mushrooms and tomatoes and cook for 3-4 minutes. Next add in pasta, artichoke hearts, spinach and seasonings and toss well. Cook for 4-5 minutes. Then add salt, pepper and cayenne pepper to taste. That’s it. Remember you can always add in whatever veggies that you like, kale, broccoli, zucchini, carrots or whatever.
