Apple Cinnamon Rolls

I'm working on a new ecookbook for the holidays and I just had to preview this recipe from the book. If you love cinnamon rolls and apples this will definitely become your new favorite recipe.


All you need is:



The Dough:


1/4  Cup of Oil (I used Grapeseed you can always use whatever oil or butter substitute you have)


1 Cup of Almond Milk (warm)


1 Tsp of Vanilla Extract


1/3 Cup of White Sugar


1 Tsp of Cinnamon


1 Pkg of  Active Yeast


3 Cups of All Purpose Flour


1/8 Tsp of Salt


The Filling:


1/4  Cup of Brown Sugar


1 Tsp of Cinnamon


1/2 Tsp of Pumpkin Pie Spice


3 Tbs of Oil or butter substitiute


2 Granny Smith Apples Peeled Diced


The Frosting:


1 Cup of Confectioners Sugar


1-1/2 - 2 Tbs of Almond Milk


1 Tsp of Vanilla Extract





Preheat oven to 375*


In a large bowl combine warm almond milk, oil, vanilla extract, sugar, salt, cinnamon and yeast and mix well. Set bowl in a warm place for 4-5 minutes. Next gradually stir in flour until a ball of dough forms (about 1/2 a cup at a time). Move dough to a lightly floured surface and using floured hands begin to knead the dough for 5-6 minutes until smooth. *The dough should spring back after pressing it with your fingers. If the dough is too sticky gradually add more flour 1 tablespoon at a time. Place dough into a clean bowl and cover with a kitchen towel and set in a warm place for about 1 hour. The dough should double in size. 


While waiting for the dough to rise prepare the filling by mixing brown sugar, cinnamon, pumpkin pie spice and oil into a medium sized bowl and set aside. Next peel and dice 2 granny smith apples. *Dice them as small as you can.  


Next mix the frosting by combining confectioners sugar, vanilla and almond milk into a small bowl and stir until smooth and set aside.


Next place the dough onto a lightly floured surface an knead for 2-3 minutes. Then roll the dough out into a rectangle about 1/2 inch thick. Then sprinkle on the filling in an even layer and add the diced apples on top. Tightly roll the dough and cut into 3 inch wide rolls. Place the rolls into a lightly greased casserole dish and bake for 20-25 minutes. Allow rolls to cool for 10-15 minutes before frosting.
