Herb Chickpea Salad

This salad is super delicious, healthy and full of protein, plus it only takes minutes to make. My favorite way to eat it is in a flour tortilla with cashew cream. (I have a previous post on cashew cream if you need it.)

 

Cook Time: 20 Minutes

Serves: 2

 

All you need is:

 

1 can of chickpeas rinsed and drained

 

2 carrots peeled and diced

 

2 stalks of celery diced

 

2 cups of grape tomatoes sliced in half

 

Juice of 1/2 a lemon

 

4 tbs of  fresh parsley chopped

 

4 tbs of fresh basil chopped

 

1/2 tsp of garlic powder

 

4 tbs of extra virgin olive oil

 

salt and pepper to taste.

 

Preparation:

 

Simply combine all ingredients into a large bowl and mix well. That's it!
