Black Bean Kale Salad!

This is one of my favorite go-to recipes when I want something super fresh and healthy. This thing I love about it, is that it is so simple make and I usually always have these ingredients on hand. This salad is great as a salsa, in wraps, or on a bed of lettuce and even just eaten with a fork.

 

 

All you need is:

 

1 Can of Black Beans (rinsed and drained)

 

1 Tomato Diced

 

1 Cup of Kale Finely Chopped

 

1/4 Cup of Red Onion Finely Diced

 

1 Green Onion Diced

 

3 Tbs of Cilantro Chopped

 

About 1 Tsb of Fresh Jalepeno Diced

 

1 Lime

 

3 Tbs of Extra Virgin Olive Oil

 

1/2 Tsp of Garlic Powder

 

1/2 Tsp of Chili Powder

 

Salt and Pepper to Taste

 

 

 

 

Preparation:

 

Start by putting the Kale in the bowl first with about 1 Tbs of extra virgin olive oil and a squeeze of lime juice and gently massage. (This will soften the kale and take away the bitterness.) Next combine all of the remaining ingredients and toss well. Then squeeze in your desired amount of lime juice and add salt and pepper to taste. Thats it. 

 

*As always you can substitue these ingredients for whatever you prefer.
