Peach Pineapple Coconut Sherbet

 

One of the best things about a vegan plant-based diet is that you can enjoy things like having a bowl of sherbet for breakfast. Unlike traditional sherbet recipies this one is dairy free (of course) sugar free and preservative free. It's actually healthy which is the opposite of traditional sherbet. It only contains 4 ingredients and best of all it only takes minutes to make. 

 

All you need is:

 

1/4 Cup of Coconut Cream Plus more for topping

(All you need to do to make coconut cream is to place a can of coconut milk in the refrigerator overnight Be sure to use an organic brand that only contains coconut and water.)

 

2 Cup of Frozen Peaches

 

1 Cup of Frozen Pineapple

 

1/4 Cup Pineapple Juice or liquid of your choice.

 

Preparation

 

Combine Coconut Cream, Peaches, Pineapple and Pineapple Juice into a food processor and blend for 45-90 seconds or until smooth. Place the sherbert into a bowl and top with additonal Coconut Cream.
