Stuffed Peppers

Stuffed peppers are one of my favorite dishes to make because it gives me the opportunity to clean out my fridge and use up my leftover veggies and rice I have.  The great thing is that you can pretty much use any thing that you have on hand.

 

Cook Time: 45 minutes

Makes 4 Peppers

 

The Ingredients

 

4 Bell Peppers of your choice with the tops cut off and seeds removed (be sure to dice the tops and use inside of the stuffing mixture)

 

3 cups of cooked rice

 

I cup of cooked lentils

 

1 stalk of celery chopped

 

2 Carrots chopped

 

1 green onion chopped

 

1 clove of garlic minced

 

1/2 tsp dried thyme

 

4 tbs of extra virgin olive oil or grapeseed oil

 

Salt and peper to taste

 

 

Directions 

 

Preheat oven to 400*

 

In a large skillet over medium heat add oil, and add all ingredients and sautee for about 4-5 minutes. Next add equal amounts of the mixture into each pepper. Place the peppers into a baking and bake for about 25 mins. then turn your oven on broil and and broil for 1-2 minutes until tops begin to turn brown. Remove and enjoy ;-)
