I recently purchased an Instant Pot and it has completely changed the way that I cook certain things, especially jackfruit. What once took me so much preparation is now easier than ever. just simply dump all of the ingredients into the instant Pot and relax. In about 20 minutes I have the most tender, juicy and flavorful jackfruit ever. if you do not have an Instant Pot you can surely make this recipe in a skillet or pot with a lid.
2 cans of young green jackfruit in water (You can also use young green frozen jackfruit if you are able to find it. always find options for jackfruit in Asian or International Markets. The key to getting the best flavor from your jackfruit is to make sure you buy YOUNG GREEN jackfruit. Otherwise your jackfruit may taste too sweet.)
1 green bell pepper sliced
1 red bell pepper sliced
1/2 an onion sliced
3 cloves of garlic
1/2 tsp of chipotle chili powder
1-1/2 tsp of chili powder
pinch of cumin (optional)
1/2 tsp of sea salt
3 tbs of extra virgin olive oil
1/4 cup of water of vegetable stock
about 6-8 small flour tortillas
1 pckg of vegan cheese (I use the Whole Foods 365 brand cheddar cheese)
Simply add all the ingredients into an instant pot or pressure cooker for 30 minutes. Once the jackfruit is done you can assemble your quesadillas.
