Kale Salad & Stuffed Avocados

Prep Time: 20 Minutes

Makes: 2 Servings

Salad Ingredients:

1 bunch of kale cleaned and chopped

1/2 a small red onion thinly sliced

1 red bell pepper sliced

1.cucumber thinly sliced

2 tbs of extra virgin olive oil

2-1/2 tbs of fresh lemon juice

2 tbs of nutritional yeast

1/4 tsp of sea salt

fresh ground pepper to taste

pinch of cayenne pepper

Stuffed Avocado Ingredients:

1 avocado sliced in half with the pit removed

1 large heirloom tomato diced

1/4 cup of finely chopped red onion

1/4 cup of fresh cilantro chopped

1 tbs of fresh lime juice

pinch of ground cumin

Sea salt to taste


First prepare the salad by adding the kale, onions, oil, lemon juice and nutritional yeast into a large bowl and use your hands to massage the kale until it becomes tender. Next add in the remaining salad ingredients and toss well. Finally add sea salt to taste and set aside.

Now make the stuffed avocados by drizzling each avocado with a little extra virgin olive oil, lime juice, cumin and sea salt. Now prepare the avocado by adding all of the ingredients into a medium size bowl and mix well. Add salt to taste Then top each avocado half with equal amounts of the mixture.
