Chipotle Mushroom Fajitas

I remember in my "pre-vegan" days how excited I would get when I would order fajitas at a restaurant and the waitress would bring over a screaming hot sizzling cast iron platter full of food. I can still hear the waiter exclaiming "This is super hot! Be very careful." So imagine my excitement when I walked through TJ Maxx and found a cast iron platter. There was no question in my mind what I was going to use it for.....Fajitas. Now if you don't have a cast iron platter that's perfectly ok. You can always use a traditional cast iron skillet or regular pan to make these.

Cook Time: about 20 Minutes

Makes 4-6 Fajitas


1 large bell pepper sliced

1 large green bell pepper sliced

1 medium sized onion sliced

1 large oyster mushroom pulled apart (see photos below) You can also use whatever mushroom you like.

1 tsp of garlic (optional)

1 tsp of ground chipotle powder

1/2 tsp of cumin

1 tsp of chili powder

sea salt and pepper to taste

Corn tortillas

4 tbs of oil for cooking (I used extra virgin olive oil)

Additional Toppings

Fresh avocado slices

Fresh pic de galo

Place a large skillet over medium high heat and add in the oil. Next add in the onions, peppers, mushrooms and seasonings. Cook while stirring occasionally for about 15 minutes. *Note I like to stir everything every few minutes so that everything has the chance to get nice and caramelized. Next add sea salt and pepper to taste. Now all you have to do is wrap em' up in a tortilla with some fresh avocado and sriracha sauce.
