I've really been focusing on cleaning out my diet as much as possible which has led me to eliminate eating traditonal pasta. So whats a girl to do?? Thankfully there are so many great gluten free alternatives to eating regular pasta like, brown rice pasta and spelt pasta, which is what I used in this recipe. This recipe has been one of my go to pasta recipes for a while now. The perfectly cooked pasta paired with the the sweet sun dried tomatoes and the fresh dill is absolutely amazing. Then to top it off, the spelt pasta makes it absolutely quilt free without compromising the flavor. You can find spelt pasta in most health food stores or even online at vitacost.com. You can always use regular pasta if you wish.
Cook Time: 20 Minutes
Makes: 3 Servings
All you need is:
1 8oz. box of spelt fettucine or any pasta that you prefer
1 cup of sliced sun dried tomatoes
1-1/2 cups of your favorite tomato or marinara sauce
2 tbs of fresh dill chopped
3 tbs of extra virgin olive oil
2 tsp of nutritional yeast (optional)
sea salt and pepper to taste
First prepare the pasta according to the package instructions and drain and place into a large skillet over low heat (you just want to keep the pasta warm).
Next add the marinara sauce and sun dried tomatoes and mix well.
Then drizzle in the extra virgin olive oil and stir in the nutritional yeast and dill.
Add salt and pepper to taste.
