Veggie Lo Mein

I absolutely love chinese takeout and Vegetable Lo Mein used to be one of my favorite dishes to order before I transitioned to a vegan plant based diet. Now usually the takeout version of Lo Mein is super greasy and full of a bunch of unhealthy crap. So I decided to make a cleaner version of it. It's super simple and easy to make and the flavor is spot on. The great thing is that you can always add or substitute any of the ingredients.

All you need is:

1/2 a box of brown rice noodles (cooked and drained)

3 tbs of your choice of cooking oil

1 celery stalk chopped

2 carrots sliced or julienned

2 cups of fresh broccoli florets

1 cup of sliced mushrooms

6 tbs of low sodium soy sauce

6 tbs of maple syrup

1/2 tbs of sesame oil (optional)

1/2 tbs of fresh grated ginger (*TIP store your ginger in the freezer and grate it as you need it)


In a small bowl mix soy sauce, maple syrup, ginger and sesame oil

Cook noodles according to package instructions. Then heat a large skillet over medium heat and add cooking oil. Next add in carrots, celery, mushrooms, and broccoli and cook for 4-5 minutes. Then add in noodles and sauce and mix well. Enjoy
